1 pound ground beef

4 medium potatoes, peeled and diced

1 medium onion, diced

3 cloves garlic, minced

4 cups beef broth

2 cups milk

1 cup shredded cheese (cheddar works well)

1 cup frozen corn

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

Optional toppings: sour cream, green onions, or extra cheese

Instructions

In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and add the beef to the crockpot.

Add the diced potatoes, onion, garlic, beef broth, milk, corn, thyme, and oregano to the crockpot. Stir gently to combine.

Season with salt and pepper according to your taste.

Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.

In the last 30 minutes of cooking, stir in the shredded cheese until melted and creamy.

Once done, serve hot and top with your favorite garnishes like sour cream, green onions, or additional cheese.
