4 cups finely chopped apples (Granny Smith or Honeycrisp recommended)

1 1/2 cups granulated sugar

1/2 cup brown sugar, packed

1/4 cup lemon juice (freshly squeezed)

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 teaspoon vanilla extract

1 packet (1.75 oz) fruit pectin (like Sure-Jell)

1/2 cup heavy cream

1/4 teaspoon salt

Instructions
 

Prepare the jars: Sterilize your jam jars and lids by boiling them in water for 10 minutes. Allow them to dry completely.

    Cook the apples: In a large pot, combine the chopped apples, granulated sugar, brown sugar, and lemon juice. Stir well and let it sit for about 10-15 minutes to let the sugars extract the juices from the apples.

      Add spices: Stir in the ground cinnamon, ground nutmeg, and salt. Place the pot over medium heat and bring it to a simmer, stirring frequently to prevent sticking. Simmer for about 10-15 minutes until the apples are soft.

        Blend the mixture: Remove the pot from heat. Using an immersion blender, puree the apple mixture until desired smoothness. If you prefer a chunkier texture, blend less.

          Add pectin: Return the pot to low heat, and stir in the fruit pectin. Cook for another 2-3 minutes while stirring until the mixture is well combined.

            Incorporate cream and vanilla: Slowly pour in the heavy cream while stirring continuously. Then add the vanilla extract and blend until the mixture is smooth and creamy.

              Test for consistency: To check if your jam is ready, place a spoonful on a plate and let it sit for a minute. Run your finger through it; if it holds its shape, it's ready. If not, cook for a few more minutes.

                Fill the jars: Pour the hot caramel apple jam into the prepared jars, leaving about 1/4 inch of headspace. Wipe the rims of the jars with a clean cloth to remove any residue, then seal with the sterilized lids.

                  Process the jars: Process the jars in a boiling water bath for 5-10 minutes for preservation. Make sure the water covers the tops of the jars.

                    Cool and store: Remove jars from the water bath and let them cool completely at room temperature. Once cooled, store in a cool, dark place.
