2 ripe peaches, peeled and diced

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon baking soda

1 1/2 cups all-purpose flour

1/2 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1 tablespoon brown sugar (for topping)

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line it with parchment paper.

    Prepare Peaches: In a small bowl, toss the diced peaches with a teaspoon of flour (this helps prevent them from sinking in the batter) and set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, approximately 3-4 minutes.

        Add Eggs and Flavorings: Beat in the eggs one at a time, then mix in the vanilla extract and ground cinnamon.
