1 lb ground chicken

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, chopped

1 can (14.5 oz) diced tomatoes, with juices

6 cups low-sodium chicken broth

1 cup small pasta (like ditalini or orzo)

2 cups fresh spinach or kale, chopped

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

Grated Parmesan cheese (for serving)

Fresh basil leaves (for garnish, optional)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

    Add the minced garlic, sliced carrots, and chopped celery to the pot. Cook for another 5 minutes, stirring occasionally until the vegetables start to soften.

      Push the vegetables to the sides of the pot, then add the ground chicken in the center. Cook until the chicken is browned and cooked through, breaking it apart with a spoon, about 6-8 minutes.

        Stir in the diced tomatoes (with their juices) and the chicken broth. Bring to a simmer.

          Once simmering, add the small pasta and cook according to the package instructions until al dente, usually about 8-10 minutes.

            Stir in the chopped spinach or kale, dried basil, and oregano. Season with salt and pepper to taste. Cook for an additional 2-3 minutes until the greens are wilted.

              Serve hot, garnished with grated Parmesan cheese and fresh basil leaves, if desired.
