Ingredients

4 salmon fillets (6 oz each)

1 cup lump crab meat, drained

1 cup shrimp, peeled and deveined, chopped

1/2 cup cream cheese, softened

1/4 cup grated Parmesan cheese

1/4 cup breadcrumbs, plus extra for topping

2 tablespoons fresh parsley, chopped

2 tablespoons lemon juice

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 tablespoons olive oil

1 lemon, sliced (for garnish)

Instructions

Preheat your oven to 375°F (190°C).

In a medium bowl, combine the lump crab meat, chopped shrimp, cream cheese, Parmesan cheese, breadcrumbs, parsley, lemon juice, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.

Gently take each salmon fillet and make a slit down the center to create a pocket for stuffing. Be careful not to cut all the way through.

Stuff each salmon fillet generously with the crab and shrimp mixture. Use toothpicks to secure the openings if needed.

Place the stuffed salmon fillets in a baking dish. Drizzle olive oil over the top and sprinkle additional breadcrumbs for a crispy topping.

Bake in the preheated oven for 25-30 minutes, or until the salmon is cooked through and flakes easily with a fork.

Once done, remove from the oven and let it rest for a couple of minutes. Garnish with lemon slices and additional parsley if desired.

Serve hot with a side of steamed vegetables or a fresh salad.
