1 medium onion, diced

2 cloves garlic, minced

3 carrots, diced

2 celery stalks, diced

1 zucchini, diced

1 red bell pepper, diced

1 can (14 oz) diced tomatoes, with juices

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and black pepper, to taste

2 cups fresh spinach or kale

1/4 cup grated Parmesan cheese (optional, for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, cooking for about 2-3 minutes until the onion becomes translucent and fragrant.

    Add the Carrots and Celery: Stir in the carrots and celery, and cook for another 4-5 minutes until they begin to soften.

      Incorporate Zucchini and Bell Pepper: Add the diced zucchini and red bell pepper to the pot. Cook for an additional 3-4 minutes, stirring occasionally.

        Pour in the Broth and Tomatoes: Add the vegetable broth and diced tomatoes (with their juices). Bring the mixture to a gentle boil.

          Season the Soup: Stir in the dried basil, oregano, salt, and black pepper. Reduce the heat to low and let it simmer for about 10-15 minutes, allowing the flavors to meld.

            Cook the Tortellini: Add the tortellini to the soup, cooking according to package instructions (usually about 3-5 minutes for fresh tortellini, longer for frozen).
