1 cup fresh cranberries

1/2 cup sugar

1/2 cup water

1 teaspoon vanilla extract

1 teaspoon orange zest

1/4 teaspoon cinnamon

6 large flour tortillas

8 oz cream cheese, softened

1 cup shredded coconut (sweetened or unsweetened)

1/2 cup chopped pecans (optional)

Powdered sugar for dusting

Instructions
 

Prepare the Cranberry Mixture: In a small saucepan, combine the cranberries, sugar, water, vanilla extract, orange zest, and cinnamon. Cook over medium heat for about 10-12 minutes or until the cranberries have burst and the mixture thickens. Remove from heat and let it cool completely.

    Prepare the Tortillas: While the cranberry mixture cools, spread a thin layer of cream cheese over each tortilla. Be sure to cover the entire surface for even flavor.

      Add Coconut and Pecans: Sprinkle shredded coconut evenly over the cream cheese layer, followed by chopped pecans if using.

        Add Cranberry Filling: Once your cranberry mixture has cooled, spoon a few tablespoons of the cranberry sauce onto the center of each tortilla on top of the coconut and pecans.

          Roll Up: Carefully roll up each tortilla tightly, starting from one edge. Make sure to roll them firmly, but not so tight that the filling oozes out.

            Chill: Place the roll-ups seam-side down on a plate. Cover with plastic wrap and refrigerate for at least 30 minutes to firm up.

              Slice and Serve: Once cooled, remove from the fridge and slice each roll-up into bite-sized pieces. Dust with powdered sugar for an extra festive touch before serving.
