Ingredients

2 cups granulated sugar

1 cup light corn syrup

1/2 cup water

1 teaspoon cinnamon oil (adjust for spice preference)

1/2 teaspoon red food coloring (or more for deeper color)

1/4 teaspoon salt

Cooking spray for greasing

Optional: powdered sugar for dusting

Instructions

Prepare Your Workspace: Grease a 9x9-inch baking dish or heatproof pan with cooking spray. Turn on your stove to medium heat. Have a candy thermometer ready, as you'll need it to check the temperature.

Combine Ingredients: In a heavy-duty saucepan, combine the granulated sugar, corn syrup, and water. Stir gently until the sugar is somewhat dissolved.

Heat the Mixture: Place the saucepan over medium heat and bring the mixture to a boil without stirring. Use your candy thermometer to monitor the temperature closely.

Cook Until Hard Crack Stage: Continue cooking until the mixture reaches the hard crack stage, which is 300°F (149°C). This may take around 10-15 minutes, so keep a close eye on it!

Add Flavor and Color: Once the mixture reaches the right temperature, remove it from the heat. Quickly stir in the cinnamon oil, red food coloring, and salt. Be cautious, as the mixture will bubble vigorously.

Pour Into the Prepared Dish: Carefully pour the hot candy into the greased baking dish. Allow it to cool for about 15 minutes at room temperature, or until it's just cool enough to handle.

Cut Into Pieces: Once the candy is cool but still pliable, use a greased knife to score it into squares or desired shapes. Let it cool completely to harden for 1 to 2 hours.

Break Into Pieces: Once hardened, break the candy along the scored lines. If desired, dust the pieces with powdered sugar to prevent sticking.

Store: Place the candies in an airtight container to maintain freshness. Enjoy your fiery creation or gift them to spice-loving friends!
