2 ripe mangoes, pureed (about 1 cup)

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup buttermilk

Zest of 1 lime (optional, for added flavor)

1/4 cup shredded coconut (optional, for garnish)

Whipped cream (optional, for serving)

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

    Prepare Mango Puree: If you haven't done so, peel the mangoes and blend them until smooth. You should have about 1 cup of mango puree.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer until light and fluffy, about 3-5 minutes.

        Add Eggs and Vanilla: Add the eggs, one at a time, to the butter mixture, mixing until well incorporated. Stir in the vanilla extract and mango puree until combined.

          Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking powder, and salt.

            Mix Dry and Wet Ingredients: Gradually add the dry mixture to the wet ingredients, alternating with buttermilk. Start and end with the dry ingredients. Mix just until combined; do not overmix. If desired, fold in lime zest for an extra zing.

              Bake the Cake: Pour the batter into the prepared cake pan and spread evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

                Cool the Cake: Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.

                  Garnish and Serve: Once cooled, you can optionally top the cake with shredded coconut and serve with whipped cream dollops for extra indulgence.
