4 medium-sized potatoes, peeled and diced

1 large onion, thinly sliced

8 oz smoked Polish sausage, sliced into rounds

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preparation: Begin by washing and peeling the potatoes. Dice them into bite-sized cubes and place them in a large bowl of cold water to prevent browning.

    Cook Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced smoked Polish sausage and cook until browned and slightly crispy, about 5-7 minutes. Once cooked, remove the sausage from the skillet and set aside.

      Sauté Onions: In the same skillet, add another tablespoon of olive oil. Toss in the sliced onions and sauté until they become translucent, about 4-5 minutes.

        Add Potatoes: Drain the potatoes and add them to the skillet with the onions. Stir to combine and allow the potatoes to cook for about 10 minutes, stirring occasionally.

          Seasoning: Add the minced garlic, smoked paprika, dried thyme, and salt and pepper to taste. Mix well to ensure the potatoes are well-coated with the spices.

            Finish Cooking: Cover the skillet with a lid and let the potatoes cook for an additional 10-15 minutes, or until they are tender and golden brown, stirring occasionally.

              Combine: Once the potatoes are cooked through, add the crispy Polish sausage back into the skillet. Mix everything together and cook for an additional 2-3 minutes to heat through.

                Serve: Remove from heat and garnish with fresh parsley. Serve hot.
