For the Garlic Butter Chicken:

4 boneless, skinless chicken breasts

1/2 cup unsalted butter

6 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried parsley

1 teaspoon paprika

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

For the Parmesan Rice:

1 cup jasmine rice

2 cups chicken broth

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1/4 teaspoon black pepper

Salt to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken Marinade:

    - In a bowl, mix melted butter, minced garlic, thyme, parsley, paprika, salt, pepper, and lemon juice to create the marinade.

      - Add the chicken breasts, ensuring they are well-coated. Allow marinating for at least 30 minutes or up to 2 hours in the refrigerator.

        Cook the Parmesan Rice:

          - In a medium saucepan, heat olive oil over medium heat. Add the jasmine rice and toast for about 2 minutes, stirring constantly.

            - Add chicken broth, salt, and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is cooked and liquid is absorbed. Stir in grated Parmesan cheese until well combined. Keep warm.

              Cook the Chicken:

                - Preheat a large skillet over medium-high heat. Add a tablespoon of butter and let it melt.

                  - Remove the chicken from the marinade (discard marinade) and add the chicken to the skillet. Cook for 5-7 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F / 75°C).

                    - Optional: Add any leftover marinade to the skillet in the last 1-2 minutes for added flavor (make sure it simmers).

                      Serve:

                        - On a plate, serve a generous scoop of Parmesan rice topped with the garlic butter chicken. Drizzle any sauce remaining in the skillet over the chicken.

                          - Garnish with freshly chopped parsley.
