4 bone-in pork chops (about 1 inch thick)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

Salt and pepper, to taste

1 tablespoon olive oil

Lemon wedges, for serving

Fresh parsley, chopped (for garnish)

Prepare the Pork Chops: Take the pork chops out of the fridge at least 30 minutes before cooking to bring them to room temperature. Pat them dry with paper towels and season generously with salt and pepper on both sides.

    Sear the Chops: In a large skillet (preferably cast iron), heat the olive oil over medium-high heat. Once hot, place the pork chops in the skillet and sear them for about 4-5 minutes on one side until they develop a nice golden brown crust. Flip them over and sear the other side for another 4-5 minutes.

      Add Garlic and Herbs: Reduce the heat to medium-low and push the pork chops to one side of the skillet. In the space created, add the butter, minced garlic, thyme, and rosemary. Once the butter melts, stir it to combine with the garlic and herbs, then spoon the aromatic mixture over the pork chops.

        Cooking to Perfection: Continue cooking the pork chops for an additional 4-5 minutes or until they reach an internal temperature of 145°F (63°C). Baste the chops with the garlic butter frequently to infuse them with flavor.

          Rest the Meat: Once cooked, transfer the pork chops to a plate and cover loosely with foil. Let them rest for about 5 minutes to allow the juices to redistribute.

            Serve: Garnish the pork chops with freshly chopped parsley and serve with lemon wedges for squeezing on top to add brightness.
