1 (4-5 lb) prime rib roast, bone-in

6 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

2 tablespoons fresh parsley, chopped

1 tablespoon kosher salt

2 teaspoons black pepper

2 tablespoons olive oil

1 tablespoon Dijon mustard

1 cup beef broth (for the pan)

Preheat Oven: Preheat your oven to 450°F (232°C).

    Prepare the Herb Mixture: In a bowl, combine the minced garlic, chopped rosemary, thyme, parsley, kosher salt, black pepper, olive oil, and Dijon mustard. Mix well to form a paste.

      Season the Roast: Pat the prime rib roast dry with paper towels. Rub the garlic herb mixture all over the roast, ensuring it's evenly coated. Allow the roast to sit at room temperature for 30 minutes to 1 hour to enhance flavor.

        Sear the Roast: Heat a large, oven-safe skillet or roasting pan over medium-high heat. Sear the roast on all sides (about 2-3 minutes per side) until browned.

          Roasting: Place the roast bone-side down in the pan. Pour the beef broth into the pan, ensuring it does not touch the meat. This will keep the roast moist and add flavor. Roast in the preheated oven for 15 minutes.

            Lower Temperature: After 15 minutes, reduce the oven temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours or until the internal temperature reaches your desired doneness (medium-rare: 130°F/54°C, medium: 140°F/60°C).

              Rest the Roast: Once cooked, remove the prime rib from the oven and tent it loosely with aluminum foil. Let it rest for at least 20-30 minutes before slicing to allow the juices to redistribute.

                Serve: Slice the roast against the grain into thick cuts. Serve with the pan juices drizzled over the top.
