12 oz cheese-filled tortellini (fresh or frozen)

1 lb flank steak, sliced thin against the grain

4 cloves garlic, minced

1 medium onion, chopped

1 red bell pepper, sliced

2 cups baby spinach

1 cup beef broth

1 tsp Italian seasoning

1 tbsp olive oil

Salt and pepper to taste

Grated Parmesan cheese for topping

Fresh parsley, chopped (for garnish)

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to the package instructions until al dente. Drain and set aside.

    Sauté the Steak: In a large skillet over medium-high heat, add olive oil. Once hot, add the sliced flank steak. Season with salt and pepper, and sear until browned on both sides (about 3-4 minutes). Remove the steak from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the chopped onion and sliced bell pepper. Sauté for about 3 minutes until they begin to soften. Add the minced garlic and Italian seasoning, cooking for an additional minute until fragrant.

        Combine Ingredients: Return the steak to the skillet and add the spinach, stirring until it wilts. Pour in the beef broth and allow it to simmer for about 2-3 minutes.

          Mix in Tortellini: Gently fold in the cooked tortellini into the skillet, mixing well to combine all ingredients. Cook for another 2-3 minutes, allowing the flavors to meld.

            Serve: Remove from heat and sprinkle with grated Parmesan cheese and fresh parsley before serving.
