Ingredients

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

1 cup unsalted butter, softened

1 cup brown sugar, packed

½ cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

1 cup white chocolate chips

1 cup red and green M&M's candies

½ cup chopped pecans (optional)

½ teaspoon cinnamon (optional)

Instructions

Preheat your oven to 350°F (175°C). Grease and line a 9x13-inch baking pan with parchment paper for easy removal of the bars.

Prepare the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using). Set aside.

Cream the butter and sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes using a hand mixer or stand mixer.

Add the eggs and vanilla: Mix in the eggs, one at a time, incorporating fully after each addition. Add the vanilla extract and mix until well combined.

Combine wet and dry mixtures: Gradually add the dry ingredients into the wet mixture, mixing on low speed until just combined. Be careful not to overmix.

Fold in the goodies: Gently fold in the white chocolate chips, M&M's, and chopped pecans if using.

Spread the batter: Pour the cookie dough into the prepared baking pan, spreading it evenly with a spatula.

Bake: Place the pan in the preheated oven and bake for 25-30 minutes or until the edges are golden and a toothpick inserted in the center comes out with a few moist crumbs (but not wet batter).

Cool and cut: Allow the cookie bars to cool in the pan for at least 10-15 minutes before lifting them out using the parchment paper. Once fully cooled, cut into squares or rectangles.

Serve and enjoy: Serve these gooey Christmas cookie bars as a delightful dessert during holiday gatherings or as a festive treat to share with family and friends!
