For the Salad:

3 cups mixed greens (arugula, romaine, and spinach)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1 small red onion, thinly sliced

1 cup Kalamata olives, pitted

1 cup feta cheese, crumbled

Fresh oregano leaves for garnish (optional)

For the Dressing:

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 clove garlic, minced

1 teaspoon Dijon mustard

1 teaspoon dried oregano

Salt and freshly ground black pepper to taste

Prepare the Vegetables: In a large salad bowl, combine the mixed greens, halved cherry tomatoes, diced cucumber, diced bell pepper, and thinly sliced red onion. Toss gently to mix all the veggies evenly.

    Make the Dressing: In a small mixing bowl, whisk together the extra virgin olive oil, red wine vinegar, minced garlic, Dijon mustard, and dried oregano. Season with salt and freshly ground black pepper to taste. Adjust the seasoning as desired.

      Combine and Toss: Pour the dressing over the salad mixture. Add the Kalamata olives and crumbled feta cheese. Toss everything gently until all the ingredients are well coated with the dressing.

        Garnish: If desired, sprinkle fresh oregano leaves on top for an extra burst of flavor.
