8 lamb chops (about 1-inch thick)

4 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh mint, finely chopped

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Zest of 1 lemon

Juice of 1 lemon

Salt and pepper, to taste

Optional: Fresh mint leaves for garnish

Marinade Preparation: In a bowl, combine minced garlic, chopped rosemary, chopped mint, olive oil, balsamic vinegar, lemon zest, lemon juice, salt, and pepper. Mix well to form a marinade.

    Marinate the Lamb: Place the lamb chops in a resealable plastic bag or shallow dish, and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

      Preheat the Grill: Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are hot and ready for cooking.

        Grilling the Chops: Remove lamb chops from the marinade, allowing excess marinade to drip off. Place the chops on the grill and cook for about 4-5 minutes on each side for medium-rare, or adjust the time according to your desired doneness.

          Resting: Remove the lamb chops from the grill and let them rest for about 5 minutes to allow the juices to redistribute.
