2 tablespoons olive oil

1 large leek (white and light green parts only), sliced and rinsed

2 medium carrots, diced

2 celery stalks, diced

3 medium potatoes, peeled and diced

1 cup diced cooked ham

4 cups low-sodium chicken broth

1 cup heavy cream

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the sliced leeks, diced carrots, and diced celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Potatoes and Ham: Stir in the diced potatoes and cooked ham, cooking for an additional 3 minutes, allowing the flavors to meld.

      Add Broth and Seasonings: Pour in the chicken broth and add the dried thyme. Bring the mixture to a boil, then reduce heat to simmer, cover, and cook for 20-25 minutes, or until the potatoes are tender.

        Blend for Creaminess: Using an immersion blender, blend the soup until creamy. For a chunkier texture, blend only half of the soup and mix back into the pot.

          Finish with Cream: Stir in the heavy cream and season with salt and pepper to taste. Heat through, but do not boil.

            Serve and Garnish: Ladle the soup into bowls and garnish with fresh parsley before serving.
