Ingredients
  

1 lb Italian sausage (mild or spicy, your choice)

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 can (14.5 oz) diced tomatoes, undrained

6 cups chicken or vegetable broth

1 cup ditalini pasta

1 teaspoon dried oregano

1 teaspoon dried basil

1 bay leaf

Salt and pepper, to taste

1 cup fresh spinach (or kale)

Grated Parmesan cheese, for serving

Olive oil, for sautéing

Instructions
 

In a large pot, heat a drizzle of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spatula as it cooks, about 4-5 minutes.

    Once the sausage is browned, add the diced onions and sauté for 3-4 minutes until translucent.

      Stir in the minced garlic, carrots, and celery, cooking until the vegetables soften, about 5-6 minutes.

        Add the diced tomatoes (with their juice), chicken or vegetable broth, dried oregano, dried basil, and the bay leaf. Bring the mixture to a gentle boil.

          Once boiling, reduce heat to low and add in the ditalini pasta. Cover and simmer for about 10-12 minutes, or until pasta is al dente, stirring occasionally.

            Remove the bay leaf, and stir in the fresh spinach (or kale) until wilted, about 2 minutes. Season with salt and pepper to taste.

              Serve the soup hot, and top with grated Parmesan cheese before digging in.
