4 large bell peppers (any color), chopped

1 lb ground beef or turkey

1 medium onion, diced

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juice

4 cups beef or vegetable broth

1 cup cooked rice (white or brown)

1 teaspoon Italian seasoning

1 teaspoon paprika

1 tablespoon Worcestershire sauce

Salt and pepper to taste

1 cup shredded cheese (cheddar or mozzarella), for topping

Fresh parsley, for garnish (optional)

Instructions
 

In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the diced onions and minced garlic, sautéing until the onions become translucent, about 3-4 minutes.

    Add the ground beef or turkey to the pot. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Drain excess fat if necessary.

      Stir in the chopped bell peppers, diced tomatoes (with juice), cooked rice, broth, Italian seasoning, paprika, Worcestershire sauce, salt, and pepper. Bring the mixture to a boil.

        Once boiling, reduce the heat to low and cover the pot. Allow it to simmer for about 30 minutes, stirring occasionally, until the peppers are tender and the flavors have melded together.

          Taste and adjust seasoning if necessary. If the soup is too thick, add more broth to reach your desired consistency.

            Serve the soup hot in bowls, topped with shredded cheese and garnished with fresh parsley if desired.
