Hearty Vegan Sweet Potato Stew

Ingredients
  

2 medium sweet potatoes, peeled and diced

1 cup carrots, sliced

1 cup celery, chopped

1 medium onion, diced

3 cloves garlic, minced

1 can (15 oz) diced tomatoes (with juice)

1 can (15 oz) chickpeas, drained and rinsed

4 cups vegetable broth

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon turmeric

1/2 teaspoon black pepper

Salt to taste

2 cups fresh spinach (or kale)

1 tablespoon fresh lemon juice

Chopped fresh parsley (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onions and garlic, sautéing until the onions become translucent, about 5 minutes.

    Stir in the sliced carrots and chopped celery, continuing to cook for another 5 minutes until the vegetables start to soften.

      Add the diced sweet potatoes to the pot, along with the ground cumin, smoked paprika, turmeric, black pepper, and salt. Stir to coat the vegetables in the spices.

        Pour in the diced tomatoes with their juice, chickpeas, and vegetable broth. Bring the mixture to a boil, then reduce the heat to a simmer.

          Cover the pot and let the stew simmer for about 25–30 minutes, or until the sweet potatoes are tender and the flavors meld together.

            Once the sweet potatoes are cooked, stir in the fresh spinach (or kale) and cook for an additional 5 minutes until wilted.

              Remove from heat and stir in the fresh lemon juice for brightness. Adjust seasoning with salt and pepper, if needed.

                Serve hot, garnished with chopped fresh parsley.
