Ingredients
  

1 lb (450g) beef stew meat, cut into 1-inch pieces

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

2 ribs celery, sliced

1 bell pepper, diced (any color)

1 cup green beans, trimmed and cut into 1-inch pieces

1 can (14.5 oz) diced tomatoes with juices

4 cups beef broth

2 teaspoons dried thyme

2 teaspoons dried oregano

1 bay leaf

Salt and black pepper, to taste

1 cup frozen peas

Fresh parsley, chopped for garnish

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

    Add the beef stew meat, seasoned with salt and pepper, and brown on all sides, about 5-7 minutes. Remove the beef and set aside.

      In the same pot, add the diced onions and garlic. Sauté until the onions are translucent, about 3-4 minutes.

        Add the carrots, celery, and bell pepper. Cook for another 5 minutes until they soften slightly.

          Return the browned beef to the pot, then add the green beans, diced tomatoes, beef broth, thyme, oregano, and bay leaf. Stir to combine.

            Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the beef is tender.

              In the last 10 minutes of cooking, stir in the frozen peas and adjust seasoning with salt and pepper as desired.

                Serve hot, garnished with fresh parsley.
