Ingredients

8 oz cream cheese, softened

4 oz goat cheese, softened

1 cup shredded sharp cheddar cheese

4 cloves garlic, minced

2 tablespoons fresh parsley, finely chopped

2 tablespoons fresh chives, finely chopped

1 tablespoon fresh rosemary, finely chopped

1 teaspoon lemon juice

1/4 teaspoon cayenne pepper (optional)

Salt and pepper to taste

1/2 cup chopped walnuts or pecans (for coating)

Fresh herbs for garnish (optional)

Instructions

In a medium bowl, combine the softened cream cheese, goat cheese, and shredded cheddar cheese. Use a fork or electric mixer to blend until creamy and smooth.

Add the minced garlic, parsley, chives, rosemary, lemon juice, cayenne pepper (if using), salt, and pepper. Mix well until the herbs and garlic are evenly distributed throughout the cheese mixture.

Lay a piece of plastic wrap on the counter and spoon the cheese mixture onto the center. Shape it into a log using the plastic wrap, rolling it tightly to ensure it holds its shape. Twist the ends of the plastic wrap to seal.

Refrigerate the cheese log for at least 2 hours or overnight to allow the flavors to meld and the log to firm up.

Once set, remove the cheese log from the plastic wrap and roll it in the chopped nuts until fully coated. The nuts add texture and beautiful presentation.

Transfer the cheese log to a serving platter, garnish with additional fresh herbs if desired, and serve with an assortment of crackers, sliced vegetables, or bread.
