Ingredients

1 cup creamy peanut butter

1 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 cup powdered sugar (for rolling)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Mix Wet Ingredients: In a large mixing bowl, combine the creamy peanut butter, granulated sugar, and brown sugar. Use an electric mixer or a whisk to blend until the mixture is smooth and creamy.

Incorporate Egg and Vanilla: Add in the egg and vanilla extract, mixing until well combined.

Add Dry Ingredients: In a separate bowl, whisk together the baking soda and salt. Gradually add the dry mixture into the wet ingredients, mixing until just combined.

Shape the Dough: Using a tablespoon, scoop out portions of dough and roll them into balls (about 1-inch in diameter).

Roll in Powdered Sugar: Roll each dough ball in the powdered sugar until fully coated. This will give them a sweet crinkly coat when baked.

Place on Baking Sheets: Arrange the sugar-coated dough balls on the lined baking sheets, leaving space between each ball to allow for spreading.

Bake: Bake in the preheated oven for about 8-10 minutes. The cookies should look slightly cracked on top but still soft.

Cool: Remove from the oven and let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.

Enjoy: Serve these delightful holiday treats with a glass of milk or store them in an airtight container for up to a week.
