1 ½ cups powdered sugar

2 tablespoons unsweetened cocoa powder

3 tablespoons sweetened condensed milk

½ teaspoon peppermint extract

½ teaspoon vanilla extract

1 cup semi-sweet chocolate chips

1 teaspoon coconut oil (or shortening)

Instructions
 

In a mixing bowl, combine the powdered sugar and cocoa powder. Stir until well blended.

    Add the sweetened condensed milk, peppermint extract, and vanilla extract to the dry ingredients. Mix thoroughly until a thick dough forms.

      If the mixture is too sticky, add more powdered sugar, 1 tablespoon at a time, until it achieves a moldable consistency.

        On a clean surface, roll the dough into a log about 1 inch in diameter. Wrap in plastic wrap and refrigerate for about 30 minutes until firm.

          Once chilled, remove the log from the fridge and slice it into ¼ inch rounds.

            Place the sliced patties on a baking sheet lined with parchment paper.

              In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.

                Dip each peppermint patty into the melted chocolate, ensuring it’s fully coated, and place it back onto the parchment-lined baking sheet.

                  Once all patties are coated, refrigerate them for about 15-20 minutes, or until the chocolate hardens.
