4 slices of thick-cut Irish bacon, diced

1 medium onion, chopped

3 cloves garlic, minced

4 cups low-sodium chicken or vegetable broth

3 medium Yukon gold potatoes, peeled and diced

2 cups green cabbage, shredded

1 teaspoon dried thyme

1 bay leaf

1 cup heavy cream (optional for extra creaminess)

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the Bacon: In a large pot, over medium heat, cook the diced bacon until crispy. Remove it with a slotted spoon and set aside, leaving the rendered fat in the pot.

    Sauté Aromatics: In the same pot, add the chopped onion. Sauté for about 3-4 minutes until the onion is translucent. Add the minced garlic and cook for another minute until fragrant.

      Add Broth and Vegetables: Pour in the chicken or vegetable broth. Add the diced potatoes, shredded cabbage, dried thyme, and bay leaf. Bring to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes are fork-tender.

        Blend the Soup (Optional): For a creamier texture, use an immersion blender to partially blend the soup, leaving some chunks for texture. If you prefer a chunky soup, skip this step.

          Stir in Cream: If using, add the heavy cream to the soup. Stir well and let it heat through for an additional 5 minutes.

            Season and Serve: Remove the bay leaf and season the soup with salt and pepper to taste. Serve hot, topped with the crispy bacon and freshly chopped parsley.
