4 boneless, skinless chicken breasts

1 tablespoon olive oil

Salt and pepper, to taste

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup Irish whiskey (such as Jameson)

1 cup heavy cream

1 tablespoon Dijon mustard

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

1 cup chicken broth

1 tablespoon fresh parsley, chopped (for garnish)

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear them for about 4-5 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

    Sauté the Aromatics: In the same skillet, add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent and fragrant.

      Deglaze with Whiskey: Carefully pour in the Irish whiskey, scraping the bottom of the skillet to release any browned bits. Allow the whiskey to simmer for about 2-3 minutes, reducing slightly.

        Make the Sauce: Lower the heat and stir in the heavy cream, Dijon mustard, thyme, and chicken broth. Mix well and let it simmer for 5-7 minutes until the sauce thickens slightly.

          Combine & Serve: Return the cooked chicken to the skillet, ensuring it is well-coated with the sauce. Let it simmer for an additional 2-3 minutes. Taste and adjust seasoning if necessary.

            Garnish & Enjoy: Serve the chicken hot, garnished with freshly chopped parsley over a bed of mashed potatoes or with crusty bread to soak up the delicious sauce.
