4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 cup cherry tomatoes, halved

1 cup artichoke hearts, quartered (canned or frozen)

1/4 cup grated Parmesan cheese

1/4 cup fresh basil, chopped (plus more for garnish)

Zest and juice of 1 lemon

1 tablespoon balsamic vinegar

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prep Chicken: Pat the chicken thighs dry with paper towels and place them in a large mixing bowl. Drizzle with olive oil.

      Season Chicken: Add minced garlic, Italian seasoning, smoked paprika, salt, and black pepper to the bowl. Toss everything together until the chicken is well coated in the seasoning mixture.

        Prepare Veggies: In a separate bowl, combine cherry tomatoes, artichoke hearts, lemon zest, lemon juice, and balsamic vinegar. Toss them gently to mix well.

          Combine Ingredients: In a large baking dish, place the seasoned chicken thighs skin-side up. Add the tomato and artichoke mixture around the chicken in the dish.

            Add Cheese and Herbs: Sprinkle grated Parmesan cheese and chopped basil over the chicken and vegetables.

              Bake: Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).
