Ingredients
  

4 boneless, skinless chicken breasts

1 cup shredded mozzarella cheese

1 cup diced ham (honey or smoked)

1 cup seasoned breadcrumbs

2 large eggs

1/2 cup all-purpose flour

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Olive oil or cooking spray (for baking)

Instructions
 

Prep the Chicken: Preheat your oven to 375°F (190°C). Place the chicken breasts between two sheets of plastic wrap and gently pound them to about 1/2-inch thickness for even cooking.

    Prepare the Filling: In a small bowl, combine the shredded mozzarella cheese and diced ham. Set it aside.

      Coat the Chicken:

        - In a shallow dish, whisk together the eggs, mayonnaise, Dijon mustard, garlic powder, onion powder, salt, and pepper.

          - In a separate shallow dish, place the seasoned breadcrumbs.

            - Dredge each chicken breast in flour, shaking off the excess. Dip it into the egg mixture, ensuring the chicken is well-coated, then press it into the breadcrumbs until fully covered.

              Add the Filling: Take each breadcrumb-coated chicken breast and place a generous spoonful of the cheese and ham mixture on one side. Fold the other half over to create a pocket. Secure with toothpicks if needed.

                Bake the Chicken: Arrange the stuffed chicken breasts on a greased baking sheet and lightly spray or drizzle with olive oil. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the coating is golden brown.

                  Serve: Carefully remove the toothpicks, if used. Garnish with freshly chopped parsley and serve hot with your choice of sides like roasted vegetables or a fresh salad.
