2 cups mashed potatoes (prepared and cooled)

1 cup sharp cheddar cheese, grated

1/2 cup Parmesan cheese, grated

1/4 cup green onions, finely chopped

1/4 cup all-purpose flour (plus extra for dusting)

1 large egg, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup breadcrumbs (for coating)

Vegetable oil (for frying)

Instructions
 

In a large mixing bowl, combine the cooled mashed potatoes, sharp cheddar cheese, Parmesan cheese, green onions, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly distributed.

    Add the beaten egg and flour to the potato mixture. Stir until the mixture is combined, making sure not to overmix. You should have a thick but manageable mixture.

      Using your hands, shape the mixture into patties, about 2 inches wide and 1/2 inch thick. Dust each patty lightly with flour to prevent sticking.

        In a shallow bowl, place the breadcrumbs. Dip each patty into the breadcrumbs, ensuring both sides are fully coated.

          Heat vegetable oil in a large skillet over medium heat. To test if the oil is ready, drop in a small piece of potato mixture; it should sizzle upon contact.

            Fry the patties in batches, avoiding overcrowding the pan. Cook each patty for about 3-4 minutes on each side or until golden brown and crispy.

              Once cooked, transfer the patties to a plate lined with paper towels to absorb excess oil.

                Serve hot with your favorite dipping sauce or garnished with additional chopped green onions.
