Ingredients
  

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained (or 1 ½ cups fresh or frozen corn)

1 red bell pepper, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced (adjust to taste)

1 cup cherry tomatoes, halved

1 avocado, diced

¼ cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Optional: crumbled feta or cotija cheese for topping

Instructions
 

In a large mixing bowl, combine the black beans, corn, diced red bell pepper, chopped red onion, minced jalapeño, and halved cherry tomatoes.

    Add the diced avocado and chopped cilantro to the bowl, being careful not to mash the avocado.

      In a small bowl, whisk together the lime juice, olive oil, ground cumin, smoked paprika, salt, and pepper.

        Pour the dressing over the salad ingredients and gently toss until everything is evenly coated.

          Taste and adjust seasoning if necessary. Allow the salad to sit for about 10-15 minutes to let the flavors meld.

            Before serving, sprinkle with crumbled feta or cotija cheese if desired. Serve chilled or at room temperature.
