Ingredients
  

4 chicken thighs, skinless and boneless

1 medium onion, chopped

4 garlic cloves, minced

2 tablespoons vegetable oil

1/2 cup soy sauce

1/2 cup cider vinegar

1/4 cup water

2 tablespoons tomato paste

2 dried bay leaves

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon black pepper

1 teaspoon dried oregano

1/2 teaspoon smoked paprika

1 fresh jalapeño, sliced (optional for heat)

Salt to taste

Chopped fresh cilantro for garnish (optional)

Instructions
 

Marinate the Chicken: In a large bowl, combine soy sauce, cider vinegar, minced garlic, cumin, coriander, oregano, smoked paprika, and black pepper. Add the chicken thighs and marinate in the refrigerator for at least 1 hour, ideally overnight for maximum flavor.

    Sauté Vegetables: Heat the vegetable oil in a large skillet or Dutch oven over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

      Brown the Chicken: Remove the chicken from the marinade (reserve the marinade) and add it to the skillet. Brown the chicken for about 3-4 minutes on each side until it gets a nice golden color.

        Add Marinade and Simmer: Pour the reserved marinade into the skillet along with the water, tomato paste, jalapeño slices (if using), and bay leaves. Stir to combine, then bring the mixture to a gentle boil.

          Simmer the Adobo: Reduce the heat to low, cover the skillet, and let it simmer for about 30 minutes, or until the chicken is cooked through and tender. Occasionally stir and check the sauce consistency.

            Adjust Seasoning: Taste the sauce and add salt as needed. If the sauce is too tangy for your liking, you can balance it with a pinch of sugar.

              Serve: Once the chicken is done, remove it from the skillet and place it on a serving platter. Spoon the adobo sauce over the chicken and garnish with chopped cilantro if desired.

                Enjoy: Serve hot with warm tortillas or over rice for a hearty meal.
