Ingredients
  

4 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup carrots, grated

1 cup corn (fresh, frozen, or canned)

1/2 cup red bell pepper, diced

1/2 cup fresh cilantro, chopped

1/2 cup green onions, sliced

1 jalapeño, deseeded and finely chopped (optional, for heat)

1/2 cup mayonnaise

1/4 cup Greek yogurt

2 tablespoons lime juice

1 tablespoon honey or agave syrup

1 teaspoon chili powder

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the green and red cabbage, carrots, corn, red bell pepper, cilantro, green onions, and jalapeño (if using). Toss everything gently to mix well.

    In a separate medium bowl, whisk together the mayonnaise, Greek yogurt, lime juice, honey (or agave syrup), chili powder, salt, and pepper until smooth and well combined.

      Pour the dressing over the cabbage mixture and toss gently to coat all the veggies evenly. Adjust seasoning if necessary.

        Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving. This allows the flavors to meld and the coleslaw to become crisp.
