1 lb ground beef or turkey

1 cup crushed tortilla chips

1 cup grated cheddar cheese

1/2 cup black beans, rinsed and drained

1/4 cup corn kernels (frozen or fresh)

1 small onion, finely chopped

2 cloves garlic, minced

2 large eggs

1/4 cup salsa (plus extra for serving)

1 packet taco seasoning mix

1 tsp cumin

Salt and pepper, to taste

1/4 cup fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for garnish)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C) and prepare a loaf pan by lightly greasing it.

    Prepare the Mixture: In a large mixing bowl, combine the ground beef (or turkey), crushed tortilla chips, grated cheese, black beans, corn, onion, garlic, eggs, salsa, taco seasoning, cumin, salt, and pepper. Mix well until all ingredients are thoroughly combined.

      Form the Meatloaf: Transfer the meat mixture into the prepared loaf pan and shape it into a compact loaf with clean hands.

        Bake: Place the meatloaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C) and the top is golden brown.

          Rest Before Serving: Once finished, remove the meatloaf from the oven and let it rest for about 10 minutes. This allows the juices to redistribute, ensuring a moist loaf.

            Serving: Slice the meatloaf and serve with extra salsa on top. Garnish with chopped cilantro and sliced jalapeños if desired.
