2 large apples (Granny Smith or Honeycrisp), peeled and diced

1 tablespoon lemon juice

1/4 cup brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon all-purpose flour

1 tablespoon unsalted butter, melted

1 sheet of puff pastry (thawed if frozen)

1 egg, beaten (for egg wash)

Optional: Vanilla ice cream for serving

Prepare the Filling: In a medium bowl, toss the diced apples with lemon juice. Add brown sugar, cinnamon, nutmeg, and flour. Stir until well combined and set aside to let the flavors meld for about 10 minutes.

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Roll Out the Pastry: On a lightly floured surface, roll out the puff pastry sheet to flatten it slightly. Cut the pastry into circles using a 4-inch round cutter or the rim of a glass. You should get about 6-8 circles.

        Fill the Pastry: Place a circle of pastry in a muffin tin slot. Gently press it into the bottom and sides. Spoon about 1-2 tablespoons of the apple mixture into the center of each pastry circle. Drizzle a tiny bit of melted butter on top of the filling for added richness.

          Cover and Seal: Take another circle of pastry, place it on top of the filling, and pinch the edges to seal the pies. You can use a fork to create a decorative edge. Make a small slit in the top of each pie to allow steam to escape.

            Egg Wash: Brush the tops of the mini pies with the beaten egg for a golden finish.

              Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until the pastry is golden brown and the filling is bubbly.

                Cool and Serve: Once baked, remove the mini apple pies from the oven and let them cool slightly before serving. Serve warm, optionally with a scoop of vanilla ice cream.
