1 pound beef tenderloin, trimmed and cut into 1-inch cubes

2 tablespoons olive oil

Salt and black pepper, to taste

1 tablespoon Dijon mustard

8 ounces cremini mushrooms, finely chopped

2 tablespoons unsalted butter

2 cloves garlic, minced

1 teaspoon fresh thyme, chopped

1 package (1 sheet) puff pastry, thawed

1 egg, beaten (for egg wash)

1 cup pâté (optional for an extra layer of flavor)

Instructions
 

Prepare the Beef: Season the beef cubes with salt and black pepper. In a skillet over medium-high heat, heat the olive oil and sear the beef cubes for 2-3 minutes until browned on all sides. Remove from heat and let it rest for a few minutes. Brush the seared beef with Dijon mustard.

    Cook the Mushroom Mixture: In the same skillet, melt the butter over medium heat. Add the chopped mushrooms, minced garlic, and thyme. Cook until the mushrooms are softened and moisture has evaporated, about 7-8 minutes. Season with salt and pepper, then let cool.

      Prepare the Puff Pastry: Preheat your oven to 400°F (200°C). Roll out the puff pastry on a lightly floured surface until it’s about 1/8-inch thick. Cut the puff pastry into 3-inch squares.

        Assemble the Bites: On each pastry square, place a small spoonful of the mushroom mixture, followed by a beef cube, and a dollop of pâté if using. Fold the corners of the square over the filling and pinch to seal. Place seam-side down on a parchment-lined baking sheet.

          Egg Wash: Brush each sealed pastry with the beaten egg to give it a golden finish.

            Bake: Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown.

              Serve: Allow them to cool for a few minutes before serving. These bites can be enjoyed warm or at room temperature.
