4 boneless, skinless chicken thighs

1/4 cup olive oil

3 tablespoons lime juice (freshly squeezed)

4 cloves garlic, minced

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon oregano (dried)

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon honey

1/4 cup fresh cilantro, chopped (for garnish)

Instructions
 

Marinade Preparation: In a mixing bowl, whisk together the olive oil, lime juice, minced garlic, chili powder, cumin, smoked paprika, oregano, salt, black pepper, and honey until well combined.

    Marinate Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour (or up to overnight for maximum flavor).

      Preheat Grill: If using a grill, preheat it to medium-high heat. If you’re using an indoor grill or skillet, heat it over medium-high heat as well.

        Cook Chicken: Remove the chicken from the marinade, letting excess marinade drip off. Place the chicken thighs on the grill or skillet. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice char, reaching an internal temperature of 165°F (75°C).

          Rest & Slice: Once cooked, transfer the chicken to a plate and let it rest for 5 minutes. Then, slice the chicken into strips.

            Serve: Place the sliced chicken on a platter and garnish with fresh cilantro. Serve with lime wedges on the side for extra zing. Enjoy it with tortillas, rice, or your favorite sides!
