1 whole chicken (about 4-5 lbs)

2 large lemons (juiced and zested)

1 orange (juiced and zested)

4 cloves garlic (minced)

1 tablespoon fresh rosemary (chopped)

1 tablespoon fresh thyme (chopped)

2 teaspoons smoked paprika

1 teaspoon salt

1 teaspoon black pepper

1/4 cup olive oil

1 onion (quartered)

1 cup low-sodium chicken broth

Fresh herbs for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Marinade: In a mixing bowl, combine lemon juice, lemon zest, orange juice, orange zest, minced garlic, rosemary, thyme, smoked paprika, salt, black pepper, and olive oil. Whisk until well blended.

      Marinate the Chicken: Place the whole chicken in a large resealable bag or a dish. Pour the marinade over the chicken, ensuring it's well coated inside and out. Marinate for at least 1 hour (or preferably overnight in the fridge for deeper flavor).

        Prepare for Roasting: Take the chicken out of the marinade and allow it to rest at room temperature for about 30 minutes before roasting. Discard any remaining marinade. Stuff the cavity of the chicken with quartered onion and any leftover herbs from the marinade.

          Roast the Chicken: Place the chicken on a roasting rack in a roasting pan. Pour the chicken broth into the bottom of the pan to keep the chicken moist during roasting. Roast in the preheated oven for approximately 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) at the thickest point of the chicken. Baste with pan juices every 20 minutes for added moisture and flavor.

            Rest and Serve: Once done, remove the chicken from the oven and let it rest for 10-15 minutes before carving. Garnish with fresh herbs if desired. Serve with pan juices for added flavor.
