For the Cake:

3 cups all-purpose flour

2 ½ cups granulated sugar

1 ½ cups unsalted butter, softened

6 large eggs

1 cup buttermilk

Zest of 2 oranges

Zest of 2 lemons

1 tablespoon vanilla extract

1 tablespoon baking powder

½ teaspoon salt

Food coloring (orange and yellow)

For the Citrus Syrup:

1 cup freshly squeezed orange juice

½ cup freshly squeezed lemon juice

1 cup granulated sugar

For the Frosting:

1 cup unsalted butter, softened

4 cups powdered sugar

1/4 cup heavy cream

Zest of 1 orange

Zest of 1 lemon

1 tablespoon vanilla extract

Food coloring (orange and yellow for decoration)

Instructions
 

Preheat & Prepare: Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, and salt.

      Cream Butter & Sugar: In another bowl, beat together the softened butter and granulated sugar until light and fluffy, about 4-5 minutes.

        Add Eggs & Flavor: Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract, orange zest, and lemon zest.

          Combine Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined, being careful not to overmix.

            Color the Batter: Divide the batter into three equal parts. Use food coloring to tint one batch orange, one batch yellow, and leave one batch as is.

              Layer the Batter: Pour the orange batter into the first prepared cake pan, then the yellow batter into the second, and leave the third uncolored or with a slight yellow tinge. Smooth the tops with a spatula.

                Bake: Bake for 25-30 minutes or until a toothpick inserted in the center of each cake comes out clean. Let them cool in the pans for 10 minutes before transferring to wire racks to cool completely.

                  Make Citrus Syrup: In a small saucepan over medium heat, combine the orange juice, lemon juice, and granulated sugar. Stir until the sugar dissolves and simmer for 5 minutes. Let it cool slightly.

                    Soak the Cakes: Once the cakes are cool, brush the tops and sides of each cake layer with the citrus syrup, allowing it to soak in.

                      Prepare Frosting: In a large bowl, beat the softened butter until smooth. Gradually add powdered sugar, heavy cream, orange zest, lemon zest, and vanilla extract. Beat until fluffy and smooth.

                        Assemble Layer Cake: Place the orange layer on a serving plate, spread a layer of frosting on top, then repeat with the yellow layer and the uncolored layer.

                          Decorate: Use the remaining frosting to cover the entire cake. Swirl edible food coloring in a gradient from orange to yellow to create the ombré effect on the frosting.
