Ingredients

2 tablespoons olive oil

1 pound chicken sausage, sliced (Italian or spicy)

1 medium onion, diced

3 cloves garlic, minced

1 ½ cups orzo pasta

4 cups chicken broth

2 cups broccoli florets (fresh or frozen)

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Sauté the Sausage: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the sliced chicken sausage and sauté until browned and cooked through, about 5-7 minutes. Remove the sausage and set aside.

Cook the Aromatics: In the same pot, add the diced onion and sauté until translucent, around 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

Add the Orzo and Broth: Stir in the orzo pasta, chicken broth, Italian seasoning, and red pepper flakes (if using). Bring to a boil, then reduce the heat to a simmer.

Incorporate Broccoli: Add the broccoli florets and browned chicken sausage back into the pot. Stir to combine. Cover and simmer for about 10-12 minutes, or until the orzo is al dente and has absorbed most of the liquid, stirring occasionally.

Season and Serve: Once the orzo is cooked, season with salt and pepper to taste. Remove from heat and stir in grated Parmesan cheese until well combined.

Garnish and Enjoy: Serve hot, garnished with fresh parsley and lemon wedges for an extra zing.
