1 sheet of puff pastry, thawed

2 medium apples (such as Granny Smith or Honeycrisp), peeled and diced

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1/2 cup granulated sugar

1/4 cup brown sugar

1/4 teaspoon nutmeg

1 egg, beaten (for egg wash)

Vegetable oil (for frying)

Powdered sugar (for dusting)

Instructions
 

Prepare the Apples: In a bowl, combine the diced apples, lemon juice, ground cinnamon, granulated sugar, brown sugar, and nutmeg. Mix well and set aside to allow the flavors to meld.

    Roll Out the Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet to approximately 1/8-inch thickness. Cut out circles using a donut cutter or two different sized round cookie cutters (one larger for the outside and one smaller for the center). You should end up with about 12 large circles and 12 smaller circles.

      Assemble the Donuts: Place a spoonful of the apple mixture in the center of each large pastry circle. Carefully place a smaller circle on top of the filling, pressing down gently around the edges to seal. Use a fork to crimp the edges and ensure they are fully sealed.

        Prepare for Frying: Heat about 2 inches of vegetable oil in a deep pan over medium heat. While the oil heats, brush each donut with the beaten egg for a glossy finish.

          Fry the Donuts: Once the oil reaches 350°F (175°C), carefully fry the donuts in batches. Cook for about 2-3 minutes on each side, or until golden brown. Remove from the oil and place them on a paper towel-lined plate to drain excess oil.

            Dust with Sugar: While still warm, dust the donuts with powdered sugar for added sweetness.
