1 ¾ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 teaspoon cinnamon

½ teaspoon nutmeg

¼ teaspoon ground ginger

½ teaspoon allspice

1 cup sugar (or brown sugar for a deeper flavor)

½ cup vegetable oil

2 large eggs

1 cup canned pumpkin puree

½ cup Greek yogurt or sour cream

1 teaspoon vanilla extract

½ cup chopped walnuts or pecans (optional)

½ cup chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.

    In a mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and allspice. Set aside.

      In a separate large bowl, beat together the sugar and vegetable oil until well combined. Add the eggs one at a time, mixing well after each addition.

        Stir in the pumpkin puree, Greek yogurt, and vanilla extract until smooth.

          Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix. If desired, fold in the chopped nuts and chocolate chips at this stage.

            Pour the batter into the prepared loaf pan, spreading it evenly.

              Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted in the center comes out clean.

                Remove from the oven and let the bread cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
