4 fillets of red snapper (about 6 oz each)

Salt and pepper to taste

2 tablespoons olive oil

1 small onion, finely chopped

1 bell pepper (red or green), diced

2 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1 cup heavy cream

2 tablespoons fresh parsley, chopped (for garnish)

Juice of 1 lemon

Prepare the Snapper: Season the red snapper fillets with salt and pepper on both sides. Set aside.

    Cook the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and diced bell pepper. Sauté for about 5 minutes or until the vegetables are translucent.

      Add Flavor: Stir in the minced garlic, diced tomatoes, Cajun seasoning, and smoked paprika. Cook for an additional 3-4 minutes, allowing the flavors to meld together.

        Make the Creamy Sauce: Reduce the heat to low and pour in the heavy cream. Stir well to combine, and let it simmer gently for about 5 minutes until it thickens slightly. Adjust seasoning with salt and pepper if needed.

          Cook the Snapper: In a separate skillet (or the same skillet if there's enough room), heat a little olive oil over medium heat. Carefully lay the seasoned snapper fillets in the skillet. Cook for about 4-5 minutes on each side or until the fish flakes easily with a fork and has a golden crust.

            Combine: Once the snapper is cooked, gently spoon the creamy Creole sauce over the fillets. Allow the snapper to soak in the sauce for a minute.

              Serve: Plate the snapper fillets, drizzle extra sauce on top, and finish with a sprinkle of fresh parsley and a squeeze of lemon juice for brightness.
