For the Cake:

2 cups all-purpose flour

1 ½ cups granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

2 large eggs

1 cup vegetable oil

1 cup buttermilk, room temperature

2 tablespoons unsweetened cocoa powder

2 tablespoons red food coloring

1 teaspoon vanilla extract

1 teaspoon espresso powder (optional, for added coffee flavor)

For the Mocha Frosting:

1 cup unsalted butter, softened

4 cups powdered sugar

½ cup cocoa powder

½ cup brewed coffee, cooled

2 teaspoons vanilla extract

Pinch of salt

For Garnish:

Grated chocolate or chocolate shavings

Whipped cream (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients: In a large bowl, sift together the flour, baking powder, baking soda, salt, and cocoa powder. Set aside.

      Combine Wet Ingredients: In another bowl, beat the eggs with the granulated sugar until light and fluffy. Add the oil, buttermilk, red food coloring, vanilla extract, and espresso powder (if using), mixing until fully incorporated.

        Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix the batter.

          Bake the Cakes: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center of the cakes comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

            Prepare the Mocha Frosting: In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar and cocoa powder, beating until combined. Add the brewed coffee, vanilla extract, and salt, mixing until smooth and fluffy. Adjust the consistency with more coffee or powdered sugar if needed.

              Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of mocha frosting on top. Place the second cake layer on top, and frost the top and sides of the entire cake with the remaining mocha frosting.

                Garnish and Serve: Decorate the cake with grated chocolate or chocolate shavings for a touch of elegance. Serve slices with a dollop of whipped cream if desired.
