2 cups long-grain white rice

1 medium tomato, chopped

1 teaspoon ground cumin

1 teaspoon chili powder

2 1/2 cups chicken or vegetable broth

1/2 cup frozen peas

1/2 cup corn kernels

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Instructions
 

Rinse the Rice: Start by rinsing the long-grain rice under cold water until the water runs clear. This helps to remove excess starch and keeps the rice from becoming sticky.

    Sauté Aromatics: In a large saucepan or skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Then, add the minced garlic and cook until fragrant, about 1 minute.

      Toast the Rice: Add the rinsed rice to the skillet and sauté for about 2-3 minutes, stirring constantly until the rice turns a light golden color. This step adds a nutty flavor to the rice.

        Incorporate Veggies and Spices: Add the chopped tomato, ground cumin, chili powder, salt, and pepper to the rice mixture. Stir well to combine and sauté for an additional 2 minutes.
