Ingredients
  

For the Crust:

1 ½ cups graham cracker crumbs

⅓ cup unsalted butter, melted

¼ cup granulated sugar

For the Apple Filling:

3 medium apples, peeled and diced (Granny Smith or Honeycrisp)

1 teaspoon cinnamon

2 tablespoons brown sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

For the Cheesecake Filling:

16 oz cream cheese, softened

¾ cup granulated sugar

½ cup sour cream

2 large eggs

1 teaspoon vanilla extract

½ teaspoon salt

For the Salted Caramel Sauce:

1 cup granulated sugar

6 tablespoons unsalted butter

½ cup heavy cream

1 teaspoon sea salt (plus more for garnish)

Instructions
 

Make the Crust:

    - Preheat the oven to 350°F (175°C).

      - In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix well until fully combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and allow to cool.

          Prepare the Apple Filling:

            - In a medium bowl, toss the diced apples with cinnamon, brown sugar, lemon juice, and cornstarch until the apples are well coated. Set aside.

              Make the Cheesecake Filling:

                - In a large bowl, beat the softened cream cheese and sugar until smooth and creamy.

                  - Add the sour cream, eggs, vanilla extract, and salt, mixing until fully incorporated and the batter is smooth.

                    Assemble the Cheesecake:

                      - Spread half of the cheesecake filling over the cooled crust in the springform pan.

                        - Add the apple filling evenly on top of the cheesecake layer.

                          - Pour the remaining cheesecake batter over the apples, smoothing the top with a spatula.

                            Bake:

                              - Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center has a slight jiggle.

                                - Turn off the oven, crack the door, and let the cheesecake cool in the oven for about 1 hour to prevent cracking.

                                  Prepare the Salted Caramel Sauce:

                                    - In a medium saucepan over medium heat, melt the sugar, stirring constantly until it becomes an amber color.

                                      - Gradually add the butter, stirring until melted. Then whisk in the heavy cream until combined, and remove from heat. Stir in the sea salt, and let cool slightly.

                                        Cool the Cheesecake:

                                          - Once fully cooled, refrigerate the cheesecake for at least 4 hours or overnight for best results.

                                            Serve:

                                              - Carefully remove the sides of the springform pan. Drizzle the cooled salted caramel sauce over the cheesecake.

                                                - Garnish with a sprinkle of sea salt and serve slices chilled.
