Ingredients
  

4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup corn (frozen or fresh)

1 cup black beans (drained and rinsed)

1 cup diced tomatoes (fresh or canned)

1/2 cup diced red onion

1 jalapeño, diced (optional for heat)

1 cup shredded Monterey Jack cheese

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a small bowl, mix the cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper together.

      Rub the spice mixture all over the chicken breasts to ensure they are evenly coated.

        Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken breasts and sear for about 5 minutes on each side until golden brown.

          While the chicken is searing, combine the corn, black beans, diced tomatoes, red onion, and jalapeño in a separate bowl. Season with a pinch of salt and mix well.

            Once the chicken is seared, remove it from the skillet and set aside. Pour the vegetable mixture into the same skillet, stirring to combine with the chicken drippings.

              Nestle the chicken breasts back into the skillet on top of the vegetable mixture. Sprinkle the shredded Monterey Jack cheese evenly over the chicken.

                Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through to an internal temperature of 165°F (75°C) and the cheese is bubbly and golden.

                  Once cooked, remove from the oven and let rest for 5 minutes. Garnish with chopped cilantro and serve with lime wedges.
