1 lb Brussels sprouts, trimmed and thinly shaved

1 cup pomegranate seeds

1/2 cup pecans, roughly chopped

1/2 cup feta cheese, crumbled (optional)

1/4 cup red onion, thinly sliced

1/4 cup extra virgin olive oil

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1 tablespoon maple syrup or honey

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Brussels Sprouts: Using a sharp knife or mandoline slicer, shave the Brussels sprouts thinly and place them in a large salad bowl.

    Combine the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, and maple syrup (or honey). Season with salt and pepper to taste.

      Toss in the Ingredients: Add the pomegranate seeds, chopped pecans, red onion, and feta cheese (if using) to the bowl with the shaved Brussels sprouts.

        Dress the Salad: Pour the dressing over the salad and gently toss everything together until all ingredients are well coated.
