Ingredients
  

1 lb ground beef (or turkey for a lighter option)

1 medium onion, chopped

2 cloves garlic, minced

1 cup green bell pepper, chopped

1 cup red bell pepper, chopped

1 cup yellow bell pepper, chopped

1 can (14.5 oz) diced tomatoes with juice

4 cups beef or vegetable broth

1 cup uncooked rice (white or brown)

2 tsp Italian seasoning

Salt and pepper to taste

1 cup shredded cheese (cheddar or mozzarella) for topping

Fresh parsley or basil for garnish (optional)

Instructions
 

In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess fat if necessary.

    Add the chopped onion and minced garlic to the pot. Sauté for about 2-3 minutes until the onion becomes translucent.

      Stir in the chopped bell peppers and cook for an additional 5 minutes until they start to soften.

        Pour in the diced tomatoes with their juice, beef or vegetable broth, uncooked rice, Italian seasoning, salt, and pepper. Stir well to combine.

          Bring the mixture to a boil, then reduce heat to low and cover. Let it simmer for about 20-25 minutes, or until the rice is cooked and the flavors meld together.

            Once cooked, taste and adjust seasoning if necessary. If the soup is too thick, you can add a bit more broth or water to reach your desired consistency.

              Serve the soup hot, topped with shredded cheese and garnished with fresh parsley or basil if desired.
