3 lbs beef chuck roast

1 tablespoon olive oil

1 large onion, diced

4 cloves garlic, minced

2 jalapeños, seeded and diced (adjust for spice preference)

1 can (14 oz) diced tomatoes with green chilies

2 tablespoons tomato paste

1 cup beef broth

2 teaspoons ground cumin

2 teaspoons chili powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

Juice of 2 limes

Fresh cilantro for garnish

Sear the Beef: In a large skillet over medium-high heat, add the olive oil. Season the beef chuck roast with salt and pepper, then sear it on all sides until browned (about 3-4 minutes per side). Transfer to the slow cooker.

    Sauté Vegetables: In the same skillet, add the diced onion, jalapeños, and garlic. Sauté for about 3-5 minutes until softened and fragrant.

      Add to Slow Cooker: Pour the sautéed mixture over the beef in the slow cooker. Add the diced tomatoes with green chilies, tomato paste, beef broth, cumin, chili powder, smoked paprika, oregano, and lime juice. Stir to combine the ingredients around the meat.

        Slow Cook: Cover and cook on low for 8 hours or on high for 4 hours, until the beef is fork-tender and easily shreds.

          Shred the Beef: Once cooked, remove the beef from the slow cooker and place it on a cutting board. Use two forks to shred the meat into bite-sized pieces.

            Mix with Sauce: Return the shredded beef to the slow cooker and stir it into the juices, allowing it to soak up all the flavors. Adjust seasoning with additional salt, pepper, or lime juice to taste.
